Recently, the rising incidence of natural catastrophe has increased disaster preparedness, aiming to mitigate its devastating effect. Developing an emergency food is one meaningful attempts rise preparedness. This research aimed determine best formula ready-to-eat rice in retort pouch packaging accepted by consumers, and operating time reach a lethality value (F0) meet commercial shelf-stable requirements as food.
